We all know that breakfast is the most important meal of the day. We also know that some mornings can be absolutely crazy and jam-packed. But a busy morning doesn’t mean you have to miss out on the most important meal of the day. These are my favorite, most delicious meal prep breakfasts to save time in the morning.
Believe me, I know how crazy mornings can be! Running around, trying to get your day started, accomplish everything you need to, AND get out the door on time. It’s a lot, I know.
But when you’re trying to start a productive day, the last thing you should do is skip breakfast. I understand that sometimes we simply can’t take the time to make a big extravagant breakfast. As nice as it sounds, there’s just not enough time!
That’s where these incredible meal prep breakfasts come in SUPER handy to save time in the morning.
Honestly, I feel like I have really mastered the quick and easy breakfast thing over the past few months. Through lots of trial and error, I have come up with such an amazing list of simple meal-prep breakfasts that save me so much time. No fussing at the stove or in the kitchen. Just a simple grab-and-go breakfast has been exactly what I need.
The best part is, I absolutely LOVE these breakfasts. You never have to sacrifice taste for convenience again with these time-saving breakfast ideas. I know you’ll love them as much as I do.

Meal Prep Breakfast Idea #1: Baked Oats
I know this is a trend that’s been blowing up on tick-tock but I’m gonna be that person here and say “I did it before it was cool”. Hahaha!
But in all seriousness, my baked oats obsession started last year. I discovered a recipe for Cinnamon Roll Baked Oats on my Pinterest last year and I ran with it.
I started by making that exact recipe. Then I explored this sweet girl’s blog more and discovered her other Baked Oat recipes! Holy delish!!
Over time I took her original recipes and altered them to my own liking. I added some extra mix-ins to my versions and found a TON of different combos that I love.
That’s one of the best parts of meal-prep baked oats… you can really make them your own with flavor combos and mix-ins.
Some of my favorite additions are:
- carrots (+ cinnamon=carrot cake vibes)
- zucchini (honestly adds a nice texture and some extra greens!!)
- chocolate chips
- berries
- apples
- peanut butter
- bananas
- cinnamon sugar
- cream cheese frosting
- sprinkles
- SO MANY MORE!
The opportunities are really endless when it comes to baked oats. And best of all, they make such a quick and easy breakfast in the morning! I just cut a square and pop it in the microwave for about 30 seconds, add some PB (or any yummy toppings) to the top, and BOOM! Hot to go (literally)!
Meal Prep Breakfast Idea #2: Egg Bites
I gotta thank Starbucks for this one. My egg bite obsession began there. But I soon realized that the cost of buying egg bites every day really started to add up. As I said in my money-saving post, I’m trying to view Starbucks as more of a treat than an everyday habit.
When I first started making these at home, I’ll admit, my expectations were low. But HOLY COW! I was so pleasantly surprised. They are JUST AS GOOD as the Starbucks version (if not better) and the best part is how much I can customize them at home.
Now, you can totally make these in just a standard muffin tin and bake them, but they don’t turn out QUITE like what I wanted. I got the Dash Egg Bite Maker and they cook them in water like the traditional sous vide egg bites.
The texture of these egg bites is PRIME. I can’t say enough about them. *chefs kiss*
Just like the baked oats, these are super customizable. You can pick your favorite mix-ins, favorite cheese, and you can even decide if you want to use whole eggs or egg whites!
Some of my favorite mix-ins for meal-prep egg bites:
- Spinach
- Mushrooms
- Brussels Sprouts (TRUST ME)
- Tomatoes
- Green Onions
- Bell Pepper
- Cottage Cheese (makes them creamy)
And then I always top them with cheese. It gives that nice crispy layer on the top. Mmmmm!
My Favorite Cheese Variations:
- Cheddar
- Feta
- White Cheddar
- Gouda
- Swiss
Now you have ALL the options to test out!
To reheat these, I will either pop them in the microwave or (this is the BEST) in my air fryer.

Meal Prep Breakfast Idea #3: Homemade Toaster Waffles
Did anyone else eat Eggos like they were going out of style as a kid? Definitely one of my favorite elementary school breakfasts!
They’re DELICIOUS but, I can’t lie, they’re not the MOST nutrient-dense breakfast option for kicking off a productive day. It is SO simple and easy to meal-prep your own freezer waffles that are a bit more of a well-balanced meal.
To make these, I use Kodiak Cakes protein pancake mix. There are so many different flavor options too. My favorites are chocolate, peanut butter, and chocolate chip. The Pumpkin flavor is super yummy too but it’s seasonal! Sad face.
I’ll just combine this mix with some water and some mix-ins (chocolate chips, blueberries, etc.) and pop it in my mini waffle maker. Let these cool on some paper towels. Don’t leave them on a plate or it will condensate. No one likes soggy waffles. Yuck!
Once they’re completely cool, I put them in a zipper bag and pop those babies in the freezer!
Toast them up like you would a standard freezer waffle and you are all set for a breakfast that feels gourmet without the fuss!
Meal Prep Breakfast Idea #4: Overnight Oats
I’m about to up your overnight oat game… Are you ready to have your life changed?
PRE-COOK INSTANT OATS and use them for your overnight oats. You can either do plain instant oats or flavored packages. Cooking the oats first makes your overnight oats SO creamy and fluffy and delicious!
After cooking some oats, I’ll add some sweetener or flavor (cinnamon, brown sugar, etc.), yogurt (I typically do vanilla), and any other mix-ins. You can add berries, chocolate, apples… whatever you want!
Overnight oats are probably my favorite meal prep breakfast to save time in the morning. I find that they almost always sound good. Like, they really just don’t get old.
Meal Prep Breakfast Idea #5: Smoothie Packs
This is the ultimate breakfast time-saver in the morning. Pre-packing smoothie bags makes it SO easy to have a nutritious, refreshing, and delicious breakfast when you are running low on time! I love to pre-pack bags of fruit combinations so I can just dump, blend, and go in the morning!
My go-to fruits (and veggies) for smoothies are:
- bananas
- strawberries
- blueberries
- pineapple
- mango
- peaches
- spinach (you don’t taste it!)
- zucchini (frozen zucchini makes the creamiest smoothies!)
I will put together little baggies with the perfect combination of these for one smoothie. That way, when I need a quick and easy breakfast for the morning, I just dump the contents in my NutriBullet, add some milk (or juice… these Bai drinks are my secret smoothie ingredient. Shh!), some protein, and blend away! 5 minutes TOPS and I have a bomb breakfast!
Since this can get really wasteful with all the baggies (and expensive!!), I like to opt for reusable freezer-safe zipper bags. You can get these at almost any grocery store!
